Farm Spotlight: Doubting Thomas Farm
Five generations of the Thomas family have grown oats on their Red River Valley farm in Minnesota since Great-Great-Grandpa planted the first crop back in 1878. Along with (of-course) top-quality oats; their certified-organic acreage raises wheat, dairy, hay, blue corn, and soybeans, along with garden produce. Doubting Thomas Farm is also one of only a handful of growers of rare and indigenous seeds for Native Harvest.
We had the opportunity to tour the farm with Noreen Thomas, the proprietor. She shared her contagious enthusiasm about the crops that were in season, recent events at the farm, and the state of local food in the Fargo Moorhead area. Her main take aways?
- Look for minimally processed foods, as they have the highest nutrient value and most flavor. Normally the more you cook or convert a food product, the less enzymes and nutrients are available for us.
- Eating local means eating seasonal.
